At Big Elk Garlic Farm we are passionate about our garlic and take great care to provide you with the best seed stock around. Our high-quality garlic is non-GMO, and we implement what we consider to be sustainable farming practices. Big Elk only uses natural compost amendments. We do not use herbicides nor do we use chemicals to dry the garlic or prevent sprouting. Additionally, Big Elk Garlic Farm employs an integrated pest management system to keep our garlic free of unwanted visitors. Our name is on the garlic that we offer and we stand behind it 100%.

‘German White’ Porcelain
The Cadillac of garlic. German White is a hardneck Porcelain garlic that is extremely pungent when eaten raw but mellows when cooked. It is a great variety for dishes that call for strong garlic flavor. The wrappers have a touch of purple to them while the bulbs are a nice cream color, with each bulb having about 4-7 large clover that peel easily. German White is easy to grow and great for beginners. Like all garlic, this variety does best in full sun with well-drained soil that has been prepared with ample amounts of compost. It is a high-producing garlic and will last for 4-6 months when stored in a cool, dry location.
Approximately 30-40 seeds/cloves per pound.

Ukrainian Red is a hardneck Rocambole variety with a strong, spicy flavor when raw and a lighter flavor with no aftertaste when sautéed. Each mahogany-colored bulb has about 7-10 cloves that peel well. This garlic does best in full sun with well-drained soil and is adaptable down to zone 8. Shelf life is about 4-5 months when stored in cool, dry conditions. Ukrainian Red produces meaty scapes that are harvested in the spring.
Approximately 40 to 50 seeds/cloves per pound.

Spanish Red is a spicy Creole variety of garlic whose fiery flavor can be tamed by roasting or sautéing. Genetically a weak-bolting softneck, Spanish Red will behave like a hardneck in northern zones. The bulbs have pinkish white wrappers and about 8-12 well-formed cloves. Like other Creoles, Spanish Red does well in warmer climates. Unlike other Creoles, Spanish Red also does well in cooler climates. It needs to be grown in full sun with very well-drained soil that is kept free of weeds. This variety stores longer than any other garlic we have ever grown, around 8-10 months when kept in a cool, dry place. Spanish Red takes longer to mature and is usually harvested a full month later than other garlic varieties, but it is well worth the wait.
